About this project

The Sourdough Framework is an open-source book that aims to help home bakers create the best possible sourdough bread. Unlike traditional recipe books, it provides a comprehensive framework that adapts to different flours, sourdough cultures, and home environments, emphasizing the underlying science of natural fermentation. The project merges knowledge from the author's previous repositories, the-bread-code and pizza-dough, and includes numerous scientific references. The repository contains the full LaTeX source of the book, along with Docker and local build instructions to generate PDF, EPUB, and website versions. Pre-compiled versions are available for download, including a sans-serif accessibility version, a black-and-white EPUB with reduced file size, and a concise TL;DR reference guide. An online HTML version is hosted at the-sourdough-framework.com. The book is licensed under Creative Commons Attribution-ShareAlike 4.0, and contributions are welcome. A hardcover version is also available for purchase.
